Cuisine Unplugged features original recipes created by Emmanuel Stroobant, famously known as the Chef in Black after his TV programme, where he dishes out fresh and innovative dishes using Asian ingredients. The award-winning chef and owner of several fine-dining and casual dining establishments is known for adapting European flovours to the tropical climate and reinterpreting traditional dishes with a modern approach. In this cookbook, Emmanuel takes the"unplugged" route and goes back to basic , playing with textural and flavour combinations of Asian and European ingredients, and creating delightful dishes such as Marinated Salmon Roe with Watermelon Ice Cubes and Pumpkin Soup with Ginger-scented Caramelised Apples.
